CHIMICHANGAS | |
1 1/2 c. shredded cooked beef, pork or chicken 1 tbsp. vegetable oil 1 med. onion, chopped 1 (4 oz.) can chopped green chilies 1/4 c. chopped black olives 1 (8 oz.) can enchilada or tomato sauce Hot sauce (Louisiana) to taste 4 (12 inch) tortillas (flour) 1/2 inch hot oil in skillet Shredded lettuce and chopped tomatoes for garnish Gaucamole (recipe follows) Sour cream Chop meat to coarse texture. Heat 1 tablespoon oil in skillet. Add onion and cook until onion is soft. Add meat, green chilies, olives, enchilada or tomato sauce and hot sauce to taste. Divide the mixture among the flour tortillas. Fold ends in and roll into a packet. Fasten with toothpicks. Brown in hot oil (375 degrees) 1 minutes each side. Place on warm serving dishes. Garnish with lettuce and tomato. Serve with guacamole and sour cream. Serves 4. GUACAMOLE: Mash 2 avocados and 2 tablespoons lemon juice. Add 2-4 tablespoons chopped green chilies, 1/4 cup chopped green onion and hot sauce to taste. |
