CHEESEBURGER PIE 
lb. ground beef
1 1/2 tbsp. onion
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. milk
3/4 c. biscuit baking mix
3 eggs
2 tomatoes, sliced
1 c. shredded Cheddar cheese

Heat oven to 400 degrees. Grease pie plate. Brown beef and onion; drain. Stir in salt and pepper. Spread in plate. Beat milk, baking mix, and eggs until smooth (15 seconds in blender (high) or 1 minute with hand mixer). Pour into plate; top with tomatoes. Sprinkle with cheese. Bake until knife inserted in center comes out clean (25 minutes). Cool 5 minutes. Serves 6-8. Casserole size, 10 x 1 1/2 inch.
