RECIPE COLLECTION
“FAMILY MEATLOAF” IS IN:

FAMILY MEATLOAF 
2 lb. ground round
1 cup bread crumbs or crushed saltine crackers
2 eggs
1 cup Parmesan cheese
1 small onion diced
1 clove garlic crushed
1 pkg. meatloaf seasoning mix
1/4 tsp. ground black pepper
1 small can tomato sauce

Mix ground beef, bread crumbs, eggs, 1/2 cup cheese, onion, garlic, seasoning packet, and black pepper. Pour tomato sauce over the top and sprinkle with remaining 1/2 cup Parmesan cheese. Place in a loaf pan and bake at 350°F for 1 1/2 hours on bottom rack of oven.

Final internal temperature should be 170°F for ground beef. Ovens vary, so check meatloaf after 1 hour.

What an easy and tasty recipe. I made it when I had a bunch of guys over helping around the house and they DEVOURED it. It's so easy to customize based on waht you have on hand...I've added celery, mushroom, and have topped it with tomato paste instead of sauce. In all cases, I used fresh grated parm-reggiano. Making 2 tonight we have leftovers for sandwiches. Thanks for the awesome recipe!

Easy and quick recipe that was delicious! One thing: it came out very 'solid'. It takes 2 eggs and a cup of breadcrumbs. Maybe cut back a little on both? Btw ground sirloin was on sale so I used that, but the fat content would be lower? Less fat, less juicy?

My recipe is similar, but I add a small can of chopped oysters and 1/2 cup of chopped dates. Sounds strange but it really takes the flavor above and beyond. Not fishy or anything. I'm a chef at a local restaurant in my home town and it sells out every time.
