PASTA ELEGANTE 
1 leek
2 cloves garlic
10 to 12 sun dried tomatoes, oil marinated
1 tsp. fresh thyme or chopped basil
Salt and pepper
3 lbs. thick walled tomatoes
4 tbsp. olive oil
2 lbs. angel hair pasta
2 1/2 c. half & half
1 lb. crabmeat or flaked salmon

Chop the leek and garlic and saute in olive oil. Add the herbs and sun-dried tomatoes. Cook until the tomatoes are soft. Strain the tomatoes into a heavy pot. Stir in the half & half or equal parts of milk and cream. Pour over the drained pasta. Toss the pasta with the flaked fish.

Snip the tomatoes into pieces.
