CHOCOLATE BUTTERCREAM FROSTING 
2 2/3 c. sifted confectioners' sugar
1/4 c. cocoa powder
1/4 tsp. salt
1 egg
1/4 c. (1/2 stick) butter, softened
3 tbsp. hot water

Sift confectioners' sugar, cocoa powder and salt into medium-sized bowl. Add egg, softened butter and hot water. Blend with spoon, then beat with rotary beater or electric beater until smooth. This frosts 1 (8 inch) triple-layer cake.

Really rich, but super delicious!! I doubled the recipe and am using it to frost a vanilla cake right now (two 9 inch rounds). I don't think the recipe would be enough for an 8 inch cake, but go ahead and try! Super delicious!

This is THE absolute BEST homemade chocolate frosting recipe I've found on the 'net to date. Yes, it is rich -- as it should be. I'm baking the Texas Sheet Cake for my birthday cake and don't want the hot icing it calls for, even tho I've been making it that way for years (def one of our family favorites!). Excellent frosting but did add 1/2 teaspoon vanilla and just a hair more salt. Did double recipe to frost 4 tiered 9-inch cake.
