2 1/2 c. cake flour
2 eggs
1 tsp. baking soda
1/4 c. buttermilk
1/2 tsp. baking powder
1 tsp. vanilla
3/4 c. shortening (Crisco)
1 1/2 c. sugar
1 1/4 c. ripe bananas, mashed

Grease and flour 2 (9") cake pans. Sift flour, soda and baking powder together. Cream butter and sugar. Add eggs, buttermilk and vanilla to mashed bananas. Add flour and banana mixture to butter and sugar mixture. Beat until well mixed. Bake at 375 degrees for 30 minutes.

ICING: Caramelize 2 tablespoons sugar. Add 1/3 cup cream. Heat until very hot with 6 tablespoons butter. Must be hot to mix with caramelized sugar. Gradually stir in 3 cups powdered sugar. Beat until smooth and creamy.
