ITALIAN MEAT LOAF (MICROWAVE) 
1 1/2 lbs. ground round
1/2 c. dry bread crumbs
1 c. tomato sauce (Ragu)
1 1/2 c. shredded Mozzarella cheese
2 tbsp. grated Parmesan cheese
1 egg
1/2 c. grated onion
1 clove crushed garlic or 1 tsp. garlic powder

1. Mix together all ingredients except cheese and reserving 1/4 cup tomato sauce and Parmesan cheese. On wax paper pat into a rectangle 1/2 inch thick.

2. Sprinkle with Mozzarella then roll by starting on the short side. Peel back paper to keep it free. Continue lifting and peeling to complete roll. Place in loaf dish. Microwave at High 9 minutes, rotating dish after 1/2 time. Reduce power to medium and microwave 11 to 14 minutes turning after 1/2 of cooking time. Drain fat. Pour remaining sauce over top and cook 2 minutes. Tent with foil 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
