BAKED STUFFED PEPPERS 
8 lg. red, yellow or green peppers
1 c. ham, chicken or hamburger, cooked
1 onion, chopped
1/2 c. cooked rice or cooked potatoes
1/2 tsp. salt
1/4 c. buttered crumbs
1 c. tomatoes
1 c. favorite vegetable
1/4 c. grated cheese

Cut tops off peppers; remove seeds and veins. Boil peppers in salt water 5 minutes. Drain. Mix ingredients, except crumbs and cheese, for filling. Stuff into peppers and top with buttered crumbs and grated cheese. Put peppers in a greased baking dish. Bake at 350 degrees for 20 to 35 minutes.

VARIATION: Add several vegetables: corn, beans, peas, or celery. Serves 8.
