STRUDEL DOUGH COOKIES
1/2 lb. butter, softened
1/2 pt. vanilla ice cream, softened
2 c. flour
White raisins, handful
1 tsp. cinnamon
Pecans, handful
1/2 c. sugar
1/2 c. melted butter
Apricot, strawberry or raspberry preserves
Crystalized fruit (optional)

Combine softened butter and vanilla ice cream, mixing well. Add the flour and blend into mixture. Refrigerate overnight. Divide dough into four portions. Roll each portion of dough out, one at a time, into a thin triangle shape. Spread a thin layer of preserves, then sprinkle with raisins and pecans and, if desired, crystalized fruit. Starting with the wide end, roll the triangle up until you meet the other end. Brush with melted butter, sprinkle with cinnamon and sugar and refrigerate until firm. Before baking, slice each roll half-way through. Place on ungreased baking sheet then into a preheated 350 degree oven. Bake approximately 25 minutes. Let cool, then slice all the way through. Place on another ungreased baking sheet and return to oven for approximately 10 minutes.
